Description

This Potsticker Noodle Bowl combines savory ground pork, tender Lo Mein noodles, shredded cabbage, and carrots in a flavorful garlic-ginger sauce with soy sauce, mirin, and sesame oil. An easy, potsticker-inspired dinner with all the delicious flavors and none of the dumpling folding.

Ingredients

Scale
  • 8 ounces wide Lo Mein noodles (cooked and rinsed according to package directions)
  • 1 tablespoon peanut oil (or vegetable oil if there is an allergy issue)
  • 1 pound ground pork
  • 1/4 cup + 2 tablespoons sliced green onions (1/4 cup mixed with pork, 2 tablespoons for garnish)
  • 1/2 cup low-sodium chicken broth
  • 3 tablespoons mirin (sweet rice wine)
  • 2 tablespoons dark soy sauce
  • 1 tablespoon minced garlic
  • 2 teaspoons grated ginger
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sriracha hot sauce (optional; adjust the amount according to desired heat level)
  • 4 cups bagged coleslaw mix (shredded green cabbage, shredded red cabbage, and shredded carrots)

Instructions

  1. Cook the Lo Mein noodles according to package directions. Drain and rinse as directed, then set aside.
  2. Heat the peanut oil in a large skillet or wok over medium-high heat.
  3. Add the ground pork and cook, breaking it into small crumbles, until browned and cooked through.
  4. Stir in 1/4 cup sliced green onions, minced garlic, and grated ginger. Cook briefly until fragrant.
  5. Add the chicken broth, mirin, dark soy sauce, sesame oil, and optional sriracha. Stir to combine.
  6. Add the coleslaw mix and toss with the pork and sauce. Cook until the vegetables begin to soften while retaining some texture.
  7. Add the cooked Lo Mein noodles and gently toss until everything is evenly coated and heated through.
  8. Divide among serving bowls and garnish with the remaining 2 tablespoons of sliced green onions. Serve warm.

Notes

  • Sriracha is optional and can be adjusted to suit your preferred spice level.
  • Vegetable oil can replace peanut oil if needed for an allergy concern.
  • For leftovers, refrigerate in an airtight container and reheat with a small splash of broth or water if the noodles become dry.
