Description

Marry Me Butter Beans feature tender butter beans simmered in a rich, creamy Tuscan sauce with garlic, sun-dried tomatoes, spinach, Parmesan, and fresh basil. This comforting stovetop recipe is full of savory flavor and makes a satisfying meat-free meal.

Ingredients

Scale
  • 2 Tbsp unsalted butter (28 g)
  • 4 cloves garlic (minced)
  • ½ tsp each salt, oregano, crushed red pepper flakes, smoked paprika
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth (120 to 236 mL)
  • 2 15-oz cans butter beans (aka lima beans, drained, 425 g cans)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream (can sub half-and-half, 236 mL)
  • ½ cup grated parmesan (50 g)
  • 2 Tbsp chopped fresh basil

Instructions

  1. Melt the unsalted butter in a large skillet over medium heat.
  2. Add the minced garlic and stir until fragrant, taking care not to burn it.
  3. Add the salt, oregano, crushed red pepper flakes, smoked paprika, and ground black pepper. Stir in the roughly chopped sun-dried tomatoes.
  4. Pour in ½ to 1 cup of vegetable broth, then add the drained butter beans. Stir gently to combine.
  5. Add the heavy cream and grated Parmesan. Stir until the cheese is incorporated and the sauce becomes creamy.
  6. Stir in the chopped fresh spinach and allow it to wilt into the sauce.
  7. Add the chopped fresh basil, stir gently, and serve warm.

Notes

  • Start with ½ cup of vegetable broth for a thicker sauce and add more as needed, up to the specified 1 cup.
  • Half-and-half can replace heavy cream, although the sauce may be thinner.
  • Stir gently to help keep the butter beans intact.
