Description

These Hawaiian Meatballs feature tender homemade beef meatballs coated in a rich sweet-and-sour pineapple sauce. Made with juicy pineapple chunks, dark brown sugar, rice vinegar, soy sauce, fresh ginger, and green peppers, this delicious family-friendly dinner is perfect served over steamed white rice.

Ingredients

Scale

For the Meatballs:

  • 1 lb lean ground beef
  • 3/4 cup soft breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1 tbs soy sauce
  • 1/2 tsp grated fresh ginger
  • 2 eggs
  • 2 tbs milk
  • 1/4 tsp black pepper

For the Pineapple Sauce:

  • 8 oz can pineapple chunks with juice
  • 1 cup dark brown sugar
  • 1/2 cup rice vinegar
  • 3 tbs soy sauce
  • 1 medium green pepper, cut in chunks
  • 2 tbs cornstarch
  • 2 tbs water

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, 1 tablespoon soy sauce, grated ginger, eggs, milk, and black pepper.
  2. Mix gently until all ingredients are evenly incorporated. Shape the mixture into evenly sized meatballs.
  3. Heat a large skillet over medium heat and cook the meatballs until browned and fully cooked through. Work in batches if necessary to avoid overcrowding. Set aside.
  4. In a large saucepan, combine the pineapple chunks with their juice, dark brown sugar, rice vinegar, and 3 tablespoons soy sauce. Stir well.
  5. Add the green pepper chunks and bring the sauce to a gentle simmer, stirring until the brown sugar dissolves.
  6. In a small bowl, whisk together the cornstarch and water until smooth.
  7. Gradually stir the cornstarch mixture into the simmering pineapple sauce. Continue stirring until the sauce thickens.
  8. Add the cooked meatballs to the pineapple sauce and gently stir to coat them evenly.
  9. Simmer until the meatballs are heated through and well coated with the sauce. Serve warm.

Notes

  • Keep the pineapple juice from the can for the sauce.
  • Mix the cornstarch and water until smooth before using.
  • Avoid overmixing the ground beef mixture to help keep the meatballs tender.
