Ingredients
Scale
- 3 cooked chipotle oven-baked chicken breasts (chopped)
- 4 large bell peppers (halved and seeded)
- 1/2 cup corn
- 1/2 cup black beans (rinsed and drained)
- 1 cup fresh pico de gallo
- 1–2 tbsp Mrs. Dash Southwest Chipotle seasoning (or homemade chipotle seasoning)
- 1 cup Monterey Jack cheese (shredded)
- Homemade chipotle aioli (linked above) (for topping)
Instructions
- Preheat the oven according to the original pepper-baking instructions.
- Wash the bell peppers, cut each in half lengthwise, and remove the seeds and membranes. Arrange the eight halves in a baking dish.
- Chop the three cooked chipotle oven-baked chicken breasts into bite-sized pieces.
- Add the chopped chicken, corn, rinsed and drained black beans, and fresh pico de gallo to a large mixing bowl.
- Add 1–2 tablespoons of Mrs. Dash Southwest Chipotle seasoning and mix until all the ingredients are evenly combined.
- Divide the chicken mixture evenly among the eight bell pepper halves.
- Sprinkle the shredded Monterey Jack cheese over the filling.
- Bake until the peppers reach your preferred tenderness, the filling is heated through, and the cheese has melted. Follow the original pepper-baking temperature and timing.
- Remove from the oven and allow the peppers to rest briefly.
- Drizzle with homemade chipotle aioli just before serving.
Notes
- Start with 1 tablespoon of chipotle seasoning and increase to 2 tablespoons for a stronger flavor.
- Drain the black beans and excess pico de gallo liquid to prevent watery filling.
- Store the chipotle aioli separately and add it after reheating.
