Description

Creamy Tuscan Shrimp-Stuffed Salmon Fillets feature tender salmon filled with juicy shrimp, garlic, fresh spinach, Parmesan, and mozzarella in a rich, flavorful cream sauce. An elegant seafood dinner perfect for special occasions or a delicious family meal.

Ingredients

Scale
  • 4 salmon fillets, skin removed
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • Lemon slices, for garnish

Instructions

  1. Pat the salmon fillets dry with paper towels. Carefully cut a pocket into the side of each fillet without slicing completely through.
  2. Heat olive oil and butter in a large skillet over medium heat. Add the shrimp and cook until they begin turning pink and opaque. Add the minced garlic and stir until fragrant.
  3. Add the fresh spinach and cook until wilted, stirring to combine with the shrimp and garlic.
  4. Pour in the heavy cream. Add Parmesan, mozzarella, paprika, Italian seasoning, salt, and black pepper. Stir until the cheeses melt and the mixture becomes smooth and creamy.
  5. Remove the skillet from the heat. Spoon the shrimp and creamy spinach mixture evenly into the pockets of the salmon fillets.
  6. Arrange the stuffed salmon in an oven-safe baking dish if using the oven-finishing method. Finish cooking according to the supplied cooking method until the salmon is cooked through and flakes easily. Check for an internal temperature of 145°F (63°C).
  7. Garnish with chopped fresh parsley and lemon slices before serving.

Notes

  • Allow the creamy filling to thicken slightly before stuffing the salmon so it stays inside the pockets.
  • Avoid overcooking the shrimp before adding them to the filling to maintain a tender texture.
  • Serve immediately with roasted vegetables, lemon rice, or mashed potatoes.
