Description

This Creamy Garlic-Paprika Shrimp Skillet features tender shrimp simmered in a rich garlic cream sauce with paprika, sweet red bell peppers, shallots, and fresh spinach. Finished with lemon juice and parsley, this easy one-pan dinner is perfect served over rice, orzo, or crusty bread.

Ingredients

Scale
  • 1 lb. peeled and deveined raw shrimp
  • 1 tsp. sea salt, divided (reduce to 3/4 tsp. if using fine table salt)
  • 3/4 tsp. cracked black pepper, divided
  • 3 Tbsp. extra-virgin olive oil
  • 1 large shallot, finely chopped (about 1/2 cup)
  • 1/2 cup finely chopped red bell pepper
  • 4 garlic cloves, minced
  • 2 Tbsp. tomato paste
  • 1/2 tsp. crushed red pepper flakes
  • 3/4 cup lower-sodium vegetable or chicken broth
  • 2 tsp. paprika
  • 2 handfuls fresh baby spinach
  • 1/2 cup heavy cream
  • 1–2 Tbsp. fresh lemon juice (from 1 lemon)
  • 2 Tbsp. chopped fresh parsley leaves
  • Cooked orzo or rice, or crusty bread for dipping

Instructions

  1. Pat the shrimp dry with paper towels. Season with part of the sea salt and cracked black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook briefly on each side until pink and nearly cooked through. Transfer to a plate.
  3. Reduce the heat to medium. Add the chopped shallot and red bell pepper to the skillet. Sauté until softened.
  4. Stir in the minced garlic, tomato paste, crushed red pepper flakes, paprika, and remaining salt and pepper. Cook briefly until fragrant.
  5. Pour in the broth, scraping up any flavorful bits from the bottom of the skillet. Bring to a gentle simmer.
  6. Stir in the heavy cream and cook gently until the sauce is smooth and warmed through.
  7. Add the baby spinach and stir until wilted.
  8. Return the shrimp and any accumulated juices to the skillet. Simmer gently until the shrimp are fully cooked and opaque.
  9. Stir in 1 tablespoon of lemon juice, adding more to taste. Sprinkle with chopped fresh parsley.
  10. Serve immediately over cooked orzo or rice, or with crusty bread for dipping.

Notes

  • If using fine table salt, reduce the total salt to 3/4 teaspoon.
  • Adjust the crushed red pepper flakes to control the heat.
  • Avoid overcooking the shrimp; return them to the sauce near the end of cooking.
