Cowboy Butter Steak Pasta

  • Author: Sophie Carter
  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Cowboy Butter Steak Pasta combines tender, juicy steak with fettuccine tossed in a rich garlic butter sauce featuring smoked paprika, red pepper flakes, fresh herbs, and Parmesan. A hearty, flavorful dinner perfect for steak and pasta lovers.

Ingredients

Scale
  • 8 ounces Fettuccine
  • 1 pound Sirloin or Ribeye Steak
  • 4 tablespoons Unsalted Butter
  • 4 cloves Garlic, minced
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Red Pepper Flakes
  • 1/4 cup Fresh Parsley, chopped
  • 2 tablespoons Fresh Chives, chopped
  • 1/4 cup Grated Parmesan Cheese
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions

  1. Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve a little pasta water, then drain and set aside.
  2. Pat the steak dry and cut it into bite-sized pieces if desired. Season evenly with the salt, black pepper, and smoked paprika.
  3. Heat a large skillet over medium-high heat. Cook the steak until browned and cooked to your preferred doneness, turning as needed. Work in batches if necessary to avoid overcrowding. Transfer the steak to a plate and let it rest briefly.
  4. Reduce the skillet heat to medium and add the unsalted butter. Allow it to melt, scraping up the flavorful browned bits from the bottom of the pan.
  5. Add the minced garlic and red pepper flakes. Stir gently and cook until fragrant, taking care not to burn the garlic.
  6. Add the cooked fettuccine to the skillet and toss until evenly coated in the cowboy butter sauce. Add a small splash of reserved pasta water if needed to loosen the sauce.
  7. Return the cooked steak to the skillet. Add the chopped parsley, fresh chives, and grated Parmesan cheese.
  8. Toss gently until everything is combined and the Parmesan is incorporated. Taste and adjust seasoning if needed. Serve warm.

Notes

  • Use ribeye for a richer, more marbled result or sirloin for a leaner option.
  • Adjust the red pepper flakes to suit your preferred spice level.
  • Reserve pasta water before draining to help create a smooth, glossy sauce.
