Description

This homemade Coffee Cake features a soft, tender vanilla cake topped with a buttery cinnamon-brown sugar crumble, optional chopped walnuts, and a sweet powdered sugar glaze. It’s an easy, comforting treat for breakfast, brunch, or an afternoon coffee break.

Ingredients

Scale

For the Cake:

  • 1 egg
  • 1/4 cup oil (vegetable or canola)
  • 1 tsp. vanilla
  • 3/4 cup sugar
  • 1/2 cup milk
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 1/2 cups flour

For the Cinnamon Topping:

  • 2 T butter (melted)
  • 1/2 cup brown sugar
  • 2 tsp. cinnamon
  • 2 T Flour
  • 1/2 cup walnuts (chopped, optional)

For the Glaze:

  • 1 T butter (room temperature)
  • 3/4 cup powdered sugar
  • 1 T milk (extra, if needed)

Instructions

  1. In a mixing bowl, whisk together the egg, oil, vanilla, and sugar until smooth.
  2. Add the milk and salt. Mix until combined.
  3. Add the baking powder and flour. Stir gently until just combined, being careful not to overmix.
  4. In a separate bowl, combine the melted butter, brown sugar, cinnamon, and flour. Mix until crumbly, then stir in the chopped walnuts if using.
  5. Prepare a baking pan and spread the cake batter evenly inside.
  6. Distribute the cinnamon-brown sugar topping evenly over the batter.
  7. Bake until the cake is set, lightly golden, and a toothpick inserted into the cake portion comes out clean or with a few moist crumbs. The original recipe does not specify an oven temperature or baking time.
  8. Allow the cake to cool.
  9. In a small bowl, mix the room-temperature butter, powdered sugar, and milk until smooth. Add a little extra milk if needed to achieve a drizzle-friendly consistency.
  10. Drizzle the glaze over the cooled cake, slice, and serve.

Notes

  • Walnuts are optional and can be omitted without changing the other ingredient quantities.
  • Vegetable or canola oil works well because both have a neutral flavor.
  • Allow the cake to cool before adding the glaze to help it remain visible on top.
  • Add extra milk to the glaze gradually to avoid making it too thin.
