Description

These chewy pumpkin spice molasses cookies are soft, rich, and full of cozy fall flavor. Made with pumpkin puree, molasses, cinnamon, and warm spices, each cookie features a tender center and a sweet cinnamon-sugar coating.

Ingredients

Scale
  • 226 g unsalted butter (1 cup)
  • 200 g light brown sugar
  • 150 g granulated sugar
  • 1 large egg (50 g without shell), room temperature
  • 1 tsp vanilla
  • 35 g molasses (2 tbsp)
  • 56 g canned pumpkin puree
  • 1 1/2 tsp cinnamon
  • 3/4 tsp salt
  • 3/4 tsp allspice
  • 1/4 tsp cloves
  • 1/4 tsp ginger
  • 1 tsp baking soda
  • 295 g all-purpose flour
  • 50 g sugar
  • 2 tsp cinnamon

Instructions

  1. Combine 50 g sugar and 2 tsp cinnamon in a small bowl to make the cinnamon-sugar coating. Set aside.
  2. In a large mixing bowl, beat the softened butter, light brown sugar, and 150 g granulated sugar until creamy and well combined.
  3. Add the room-temperature egg and vanilla. Mix until incorporated.
  4. Add the molasses and pumpkin puree. Mix until smooth and evenly combined.
  5. Add 1 1/2 tsp cinnamon, salt, allspice, cloves, ginger, and baking soda. Mix until the spices are evenly distributed.
  6. Add the all-purpose flour and mix on low speed just until no dry flour remains. Avoid overmixing.
  7. Scoop portions of dough and roll them into balls.
  8. Roll each dough ball in the prepared cinnamon-sugar mixture until evenly coated.
  9. Arrange the dough balls on a parchment-lined baking sheet, leaving space between them.
  10. Bake using a standard cookie-baking temperature until the edges are set and the centers remain soft. The original recipe did not specify an oven temperature or baking time.
  11. Allow the cookies to rest briefly on the baking sheet before transferring them to a wire rack to cool.

Notes

  • Use plain canned pumpkin puree, not pumpkin pie filling.
  • The dough will be soft because of the pumpkin and molasses. Use a cookie scoop for easier shaping.
  • Avoid overbaking to preserve the chewy centers. Allow the cookies to set before moving them.
